"Tamaiya Honten" is a long-established wagashi shop founded in the 41st year of the Meiji era (1908). It is located along the Nagara River, nestled in the historic district of "Kawaramachi." Since its opening, the signature product has been the "Nobori Ayu" (上行香魚). This sweet is made with high-quality wheat flour and a generous amount of eggs to create a honey cake outer layer, which encases a soft rice flour confection known as "gyuhi." It has a mild and rich flavor, and its shape resembles the small sweetfish that thrive in the clear waters of the Nagara River, making it quite adorable. The sweetfish swimming gracefully in the clear stream serves as the inspiration for this sweet, which has become a famous delicacy of Gifu. Many wagashi shops in Gifu City offer related products, but it is said that this "Nobori Ayu" is the original. Packaged in a box, the "Nobori Ayu" shaped tags are also very cute, making it an excellent choice for souvenirs or gifts. In addition to the main store at Tamaiya Honten, it can also be purchased at Gifu Takashimaya, inside JR Gifu Station, and at JR Gifu Hashima Station.
