Yamada-ya Honten, a famous Japanese wagashi shop, was founded in 1951 and offers freshly made ningyo-yaki. Today, it is a renowned sweet treat representative of Kinshicho in Tokyo. The owner initially started as an egg wholesaler and later began experimenting with high-quality eggs to make the then-popular ningyo-yaki. The shop now uses brand eggs called "Akaggs" from the Unosawa Poultry Farm in Chiba Prefecture to make the cake batter. Additionally, cute shapes like tanuki (raccoon dog) and maple leaves are also reasons why this ningyo-yaki is so popular. Yamada-ya Honten's ningyo-yaki contains no preservatives or additives, and the shelf life, including the production date, is four days.
