The cheese workshop "Atelier de Fromage" was established in 1982 (Showa 57) and produces high-quality dairy products using carefully selected ingredients and methods. It is Japan's first shop to make "raw cheese," successfully creating uniquely flavored cheeses by combining techniques learned from the cheese-producing region of France with exclusive methods. The raw milk used comes from the shop's own herd of Jersey cows and Dutch cows from nearby farms, with proportions adjusted according to the type of cheese being made. Currently, there are about 20 types of cheese available. From the first product "raw cheese" to "Camembert cheese" used in first-class cabins of airlines, and the award-winning "blue mold Camembert cheese" that received a gold medal from Monde Selection, a variety of cheeses are offered. In addition to the main store in Tōmi City, Nagano Prefecture, there are several branches and restaurants in Karuizawa. The old Karuizawa store offers a rich menu featuring cheese, yogurt, and cakes made in-house, as well as pizzas loaded with cheese. Takeout items like raw cheese soft serve ice cream are also very popular.
