Founded in the 4th year of the Keio era (1868), "Kimura-ya Honten" is the oldest store among the many ningyo-yaki shops in Asakusa. After passing through the Kaminarimon and walking along Nakamise Street to the end, you will find the store located in front of the Hōzōmon of Senso-ji Temple, always crowded with a large number of tourists. The signature ningyo-yaki, filled with red bean paste and made with a recipe developed by the first-generation owner, features an outer skin made of flour and eggs. Its moderate sweetness and simple texture make it easy to enjoy several at once. The molds used to create the ningyo-yaki, shaped like Asakusa's five-story pagoda, Raijin, lanterns, and pigeons, have remained unchanged since the store's establishment. The ningyo-yaki, carefully made one by one by the craftsmen in the store, can be kept at room temperature for a week, and there is a wide variety of boxed options, making it a popular choice for souvenirs. For those who do not eat red beans or are concerned about sweets, there are also options for ningyo-yaki without filling. Additionally, the handmade wafers sold in the store are quite popular (including egg wafers, peanut wafers, bean wafers, cashew wafers, ginger wafers, and perilla wafers).
