The Hyakuhana-en was established in the 15th year of the Meiji era (1882) and is a long-standing wagashi shop in Niigata. Now run by the fourth generation, it continuously introduces new snacks that emphasize tradition while incorporating Western dessert elements.
"Niigata Kohaku" is a modern twist on the traditional "Kohaku candy," where kanten is dissolved and mixed with sugar and syrup to create a dry surface. The appearance is inspired by famous Niigata products, including rice, sake, Bandai Bridge, edamame, snow, Sado Island, ocean waves, and fireworks, with flavors such as yuzu, matcha, and blueberry. Notably, the rice and sake varieties use sake brewed with 100% pure rice from the Imada Tsukasa Brewery in Niigata City. The texture features a crispy outer layer and a chewy inner layer.
