Ide Shoten is a ramen specialty shop that offers the local soul food "Wakayama Ramen." The rich tonkotsu soy sauce broth is paired with chewy straight noodles and topped with colorful kamaboko, making it one of the most renowned regional ramens in Japan. There are many ramen shops in Wakayama Prefecture, but among them, the "Ide system" is the most famous, often referred to as the "headquarters of Wakayama Ramen." Established in 1953 (Showa 28), it sincerely preserves the flavors created through continuous experimentation by the first and second-generation owners, and today it has become a popular shop with long lines. The meticulousness of Ide Shoten is countless, with the most time-consuming aspect being the broth preparation. The collagen released during the simmering of the pork bones is carefully cooked to achieve a thick and emulsified consistency, employing a unique and labor-intensive method.
