In Niigata, there are five different types of local ramen, collectively known as "Niigata's Five Great Ramens." One of these flavors is based on soy sauce, characterized by a light broth. "Mikiyashiya," a long-established shop founded in 1957, is a representative place where you can taste this light-style ramen.
The broth is made by simmering pork bones, small dried sardines, and vegetables, combined with soy sauce to create a clear and transparent soup base, served with thin, curly noodles for an exquisite flavor. The toppings include chashu, green onions, bamboo shoots, and fish cakes. The broth may seem simple, but its taste is profound and rich. This delicious ramen, loved by people of all ages, is also referred to as the hometown flavor of Niigata citizens.
By the way, Mikiyashiya has three branches, each run by one of the three brothers. The main branch not only has counter seating but also some tables that can accommodate five people. Sometimes, the table seating may require sharing.
