New broth is added to the soup base that has been cooked in a feather pot, and by stirring and simmering, the rich sweetness and deliciousness of the tonkotsu create a dense layer of oily foam. Moreover, this ultimate tonkotsu ramen is completed with homemade thin flat noodles that emit the original aroma of wheat, along with a secret sauce made from various seafood broths and specially blended local soy sauces. Like Hakata tonkotsu ramen, you can specify the firmness of the noodles. There are five levels ranging from "super hard" to "super soft," and the main store recommends choosing "slightly soft" noodles to enjoy the elastic texture.
