Ashikaga City, home to Japan's oldest school, the Ashikaga School, is a region rich in cultural heritage. Among the local famous confections, there is a delicious treat that embodies the regional characteristics. This is the "Ko-in Monaka," a type of wagashi (Japanese sweet) made by wrapping red bean paste in a mochi skin. True to its name, the Ko-in Monaka resembles a square ancient seal. Crafted by skilled artisans who imitate the shapes of old seals from the Ashikaga School and Bannaji Temple, as well as signature seals, the Ko-in Monaka is quite famous as a representative confection of Ashikaga. The Ko-in Monaka is produced by "Kōundō Honten," established in the first year of the Meiji era (1868). For over 150 years, this long-established shop has continuously worked hard through generations of artisans to pass down this monaka, which represents Ashikaga's famous sweets. The red bean paste is made from Hokkaido Tokachi red beans, adhering to the traditional cooking method known as "nibutatsu," which involves boiling the beans until they are soft to enhance their rich flavor. The fragrant and sweet red bean paste perfectly complements the mochi-scented skin, making the Ko-in Monaka an exquisite treat. The packaging of the Ko-in Monaka is elegant and refined, featuring the calligraphy and artwork of the famous Japanese calligrapher and poet Mitsuo Aida (Japanese: 相田みつを), adding a touch of charm. The product can be stored at room temperature for about a week, making it an excellent choice as a souvenir.
