Yoshida Udon, a long-established restaurant that has been in business for about 70 years, is now run by the third-generation owner who protects the restaurant's signature dish. The classic combination of horse meat paired with Yoshida Udon is said to originate from TSURUYA Shokudo.
Yoshida Udon is one of the "100 Selected Local Dishes of Agricultural, Mountain, and Fishing Villages" designated by the Ministry of Agriculture, Forestry and Fisheries, and it is beloved by the citizens of Fujiyoshida City as a soul food. The noodles are slightly firm and chewy, paired with the restaurant's homemade spice blend "Suridane (すりだね)" to enhance the flavor. Horse meat with cabbage is the most common classic side dish.
The noodles are made with sea salt rich in minerals, containing half the salt content of regular Yoshida Udon. A soy sauce-based Kaeshi is made, and local miso is added to create a seafood broth, completely avoiding chemical seasonings, showcasing a dedication to the ingredients.
The menu offers a variety of options including meat, tempura, eggs, and fried pork slices, with the "Zeni Udon (全入りうどん)"—which includes all the toppings—being a signature dish.
