Details

MORIKUNI is the only sake brewery on Shodoshima Island. Since 2015, it has been using a portion of the sake rice "Oseto" grown in the terraced fields of the Nakayama region in Kagawa Prefecture for brewing. In 2020, they developed "Sankei Olive Yeast," extracted from olives produced on Shodoshima Island. The brewers use high-quality rice suitable for sake brewing from the Setouchi coastline, skillfully crafting authentic local sake from Shodoshima. The representative product, the "Island Series," features sake names that use onomatopoeic words describing the drinking experience, making them particularly charming. Examples include "fuwafuwa" (light and fluffy), "fufufu," "utoto," and "bibibi." In order to preserve the original flavor of the handcrafted sake, they avoid excessive processing after brewing and bottle it directly while retaining its freshness and aroma. As a result, the sake has a slight color, unlike ordinary sake, which is usually clear and transparent. The brewery also houses the MORIKUNI Gallery and a bakery. The building was formerly a 70-year-old tsukudani factory, which has been renovated into a stylish and elegant shop. The MORIKUNI hot dog buns made from sake rice flour are very popular. In the MORIKUNI Gallery at the brewery, in addition to offering carefully selected specialty sake, they also provide various dishes made with local ingredients from Shodoshima that incorporate sake lees, as well as products suitable for souvenirs.
