"Zha Jiang Mian" (炸醬麵) and "Cold Noodles" (冷麵), as well as "Wanzi Soba" (椀子蕎麥麵), are all part of the "Three Great Noodles of Morioka." The original "Zha Jiang Mian" from "Bailong" (白龍) started over 70 years ago from a food stall and now has four branches in the city. The main store is located on Chuo Street, near the Iwate Prefectural Office and the Iwate Prefectural Hall, where long lines of diners often form on weekends.
The famous Zha Jiang Mian from Bailong was created by the first owner, who adapted the noodles he had eaten in China. The chewy flat noodles are combined with a secret miso sauce made from over a dozen ingredients, including cucumber, chopped green onions, meat sauce, and shiitake mushrooms, and mixed well before serving. On the table, there are condiments like vinegar, chili oil, and garlic that diners can add according to their taste.
Halfway through the meal, you can crack an egg into the bowl, add miso and green onions, and pour in the noodle broth to transform it into "Egg Soup" (雞蛋湯). The fluffy egg drop and mild flavor make for the perfect ending to the meal.
