Breath Farm Ibuki, a farming corporation that focuses on environmentally friendly rice production, operates a direct sales store featuring Ibuki Soba and barley. Ibuki Soba refers to the buckwheat that has been cultivated on the slopes of Mount Ibuki since the Heian period. Its grains are smaller, and during milling, more of the outer husk is retained, resulting in a rich aroma unique to the husk. It has been rated as "soba with a strong, distinctive flavor and texture, full of wild taste." "Soba no Sato Ibuki" serves homemade soba noodles made from buckwheat flour ground with a stone mill. From Monday to Wednesday, you can enjoy the darker "Hiki-gurumi Soba," which is made from buckwheat that retains its husk; from Friday to Sunday, they serve the smoother and lighter "Maru-nuki Soba," made from de-husked buckwheat grains. The cold noodles feature a spicy flavor enhanced by Ibuki radish in the "Daikon Oroshi Soba," while the hot noodles include options like mountain vegetable soba. On weekends, there are also 20 limited servings of "Juwari Soba." The location is excellent, allowing diners to enjoy their meals while gazing at the majestic Mount Ibuki in front of them.
