It has been rated as "soba with a strong, distinctive flavor and texture, full of wild taste." "Soba no Sato Ibuki" serves homemade soba noodles made from buckwheat flour ground with a stone mill. From Monday to Wednesday, you can enjoy the darker "Hiki-gurumi Soba," which is made from buckwheat that retains its husk; from Friday to Sunday, they serve the smoother and lighter "Maru-nuki Soba," made from de-husked buckwheat grains. The cold noodles feature a spicy flavor enhanced by Ibuki radish in the "Daikon Oroshi Soba," while the hot noodles include options like mountain vegetable soba.
