Pork Miso Donburi (Pork Miso Rice Bowl) is one of the local delicacies representing Chichibu. First, pork marinated in miso is grilled over charcoal, and then the fragrant, charred pork is placed on top of white rice. This popular dish was born in 2008. Although its history is not long, it has quickly become a well-known menu item, attracting food lovers from both within and outside the prefecture to come and taste it. Many pork dishes in Chichibu originate from the traditional practice of consuming wild boar meat in the Okuchichibu mountainous area. With the development of pig farming, pork without a gamey taste gradually replaced the hard-to-hunt wild boar meat. Pork Miso Donburi is a dish that uses traditional miso from Chichibu and showcases creativity in its preparation. It is said that it took three and a half years to perfect this dish. The miso-marinated pork has a chewy texture, and the aroma of the pork blends with the sweet and salty miso, creating a delightful flavor that spreads in the mouth, making it irresistible. The characteristic of Pork Miso Donburi is that it looks rich in flavor but has a refreshing and non-greasy taste when eaten.
