The "Hakata SAKANA Building," established with the philosophy of "wanting everyone to taste the fresh seafood cuisine of Hakata," houses three dining establishments, one of which is "Hakata Izakaya DOGEN Umi (どげん海)." This restaurant specially selects ingredients from the "Kisushima Peninsula," located in the northwest of Fukuoka Prefecture and protruding into the Genkai Sea, to prepare authentic Japanese dishes. The fresh fish caught in the Genkai Sea thrive in a rich environment filled with plankton and small fish, and grow in the turbulent waves, resulting in plump bodies, rich fat content, and firm meat. The seafood used in the restaurant is directly purchased from fishermen at Kisushima Fishing Port and sent straight to the live fish tank in the restaurant, ensuring freshness. The "live squid" and "live fish sashimi" are must-try delicacies, caught from the live fish tank only after ordering, and then expertly handled on the spot by experienced chefs. Additionally, there are many exquisite dishes made from ingredients such as the melt-in-your-mouth sweet pork "Ito no Takara," the chewy and irresistible "Kisushima Chicken," and the carefully cultivated "Ito Vegetables," freshly harvested in the morning from local farms.
