Hatsuhana Soba Main Store was established in 1934 and is a charming soba noodle restaurant located next to Yumoto Bridge on the Hayakawa River. The name of the restaurant comes from the name of Katsu Gorō's wife, who appears in the Kabuki play "Hakone Reigenki: Kutsuzuki no Gaku." The specialty of the restaurant is the "Yam Soba," made using a unique method that completely avoids water, relying solely on buckwheat flour, wild yam, and free-range chicken eggs. The buckwheat flour is carefully selected from domestic sources, and different cooking methods are employed according to the seasons, while the wild yam is a high-quality species cultivated through natural farming methods. The signature menu items include soba noodles and yam puree, combined to create the "Steamed Soba." The noodles are firm and chewy, and the soba has a unique rich sweetness that pairs perfectly with the yam.
