Spring Coming Pavilion, known for its local delicacy "Crispy Soba Noodles" derived from Taiwanese noodle dishes, has been in operation for over half a century. The crispy noodles are drizzled with sauce, creating a "pali pali" crunching sound when eaten, which is how it got its name. At first glance, it resembles Nagasaki's famous "Sara Udon," but the sauce for Sara Udon is made with a pork bone broth thickened with starch, while Crispy Soba Noodles use a light sauce made from chicken bone broth, resulting in a relatively refreshing taste.
The broth is carefully prepared by simmering chicken bones sourced by the restaurant. The ingredients include a generous amount of vegetables and seafood, and the noodles are fried in chicken fat extracted from Chōshū chicken. There are two types of noodles available: the "hard crispy noodles," which are firmer, and the "soft crispy noodles," which are softer. Customers also enjoy varying the flavor by drizzling vinegar soy sauce or citrus vinegar sauce over the dish. In addition to Crispy Soba Noodles, the menu also offers regular ramen, dumplings, and char siu as side dishes.
