Jiangze is the origin of the local delicacy "Katsuura Dandan Noodles®," which was born in Katsuura City, Chiba Prefecture and has now gained national recognition. Founded in Showa 29 (1954), it is said that the first-generation owner was inspired by Sichuan's dandan noodles to create this signature ramen dish. The dish is based on a soy sauce broth infused with homemade chili oil, topped with ground meat, onions, and finely sliced green onions. Its distinctive feature is the intense spiciness that can make you break a sweat with just one bite! After a long day of work, local fishermen or ama (female divers) find this ramen perfect for warming up from the cold sea water, which has gradually built its immense popularity. The flavor of Katsuura Dandan Noodles is not only spicy but also allows you to experience the gentle sweetness of the onions, perfectly blending with the rich ground meat for an ideal texture. In addition to the classic dandan noodles, the menu also offers cold dandan noodles served with dipping sauce and a winter-exclusive offal dandan noodle dish.
