The traditional Kyoto restaurant "Rokusho" is famous for its wooden bucket bento (teoke bento). Located on the west side of "Heian Shrine," it offers beautifully crafted Kyoto cuisine made from seasonal ingredients in a space rich with Kyoto's charm. The restaurant features a soufflé coffee area, and the soufflé pancakes served during the coffee time after lunch are also one of Rokusho's signature items.
The second-generation owner, Yoshikazu Horiba, who conceived the wooden bucket bento, was deeply moved by the soufflé pancakes he tasted in France during his later years, leading him to introduce them in the restaurant. The soufflés are made using traditional methods and take about 25 minutes to bake individually after ordering. Although this dessert may seem quite different from Kyoto cuisine at first glance, it embodies the restaurant's philosophy of "only serving dishes made in our visible cooking area."
In addition to classic flavors like vanilla, matcha, chocolate, and cheese, the soufflés also feature 2 to 3 seasonal limited flavors each month, such as cherry blossoms in spring, lemon in summer, pear in autumn, and yuzu in winter. The texture that melts instantly in your mouth and the delicate flavors create a sense of pure happiness.
