📖 Details

The pride of Niigata, the "Wappa" (圓盒飯) is a traditional local dish originating from this establishment. The so-called Wappa is a round bento box made from thin cedar wood, filled with rice cooked in a flavorful broth, and topped with seasonal seafood and other ingredients that are steamed together. This dish was developed by the first-generation owner of the restaurant in collaboration with the famous Japanese gourmet and chef, Kitauji Rosanjin. The most popular variety is the "Salmon Parent-Child Wappa" (鮭魚親子圓盒飯), which is generously topped with salmon and salmon roe. There are also Wappa options featuring crab, shrimp, and oysters, so be sure to give them a try. In addition to the signature Wappa, the menu includes dishes like the "Nanban Shrimp" (南蠻蝦), known for its bouncy texture and sweet, large size, as well as the local dish "Nohira Soup" (能平汁), which is a stew made with small taro, carrots, and other vegetables. Not only does the restaurant offer a rich variety of local cuisine, but you can also enjoy many types of sake produced in Niigata Prefecture. The restaurant features counter seating where you can watch the chef's knife skills while dining, as well as tatami seating that can accommodate up to 46 people, and a sunken hearth seating area for four. In this warm and nostalgic Showa-era atmosphere, indulge in the local dishes of Niigata.
