Founder Mr. Hatanaka declared his commitment to creating delicious ramen for his family, leading to the establishment of the current Santouka Ramen. After numerous failures and improvements, he finally developed a unique recipe for the tonkotsu white soup base, resulting in a rich and mellow flavor. Today, Santouka has not only multiple branches in Japan but also abroad, enjoying popularity among food lovers from various countries. The dedication to quality is evident even from the ramen bowl. All branches use custom-made bowls that are slightly smaller and heavier, with a narrow rim. The carefully calculated thickness of the bowl allows the aroma and flavor of the broth to remain intact right up to the moment it reaches the mouth, while also helping to retain heat after serving. The blue color is extremely rare in ramen bowls and has become a symbolic color of Santouka. Side dishes are also highly favored, including the signature dish "Special Pork Cheek" made with precious pork cheek, and "Green Onion Rice," topped with bonito flakes, seaweed, and chopped green onions, which are just as popular as the ramen itself, offering a wide variety of options.

Originally intended to "make delicious ramen" for my family, it has now led to the creation of the current 山頭火ラーメン (Santouka Ramen). The specially customized blue ramen bowls are also quite exquisite. There are many side dish options, including premium pork cheek and green onion rice.
