It starts with a basic broth made by simmering whole chickens from Kyushu with water for six hours, fully extracting the delicious flavors of the chicken, resulting in a rich and layered taste that bursts in your mouth. Next, the Torita-style way to enjoy it is to dip the succulent bone-in chicken, chicken thighs, chicken breasts, and Hakata green onions into the broth until cooked, then add juicy chicken meatballs containing chicken gizzards and vegetables to soak up the broth. A specially prepared dipping sauce made with a versatile Kyushu mandarin vinegar base and perfectly ripe yuzu pepper enhances the flavor even more.
