Located in Hakata, Fukuoka Prefecture, "Torita Hakata Honten" offers traditional hot pot dish "Mizutaki," originating from the Hakata festival "Gion Yamakasa." When the pot is served at the table, the staff prepares it on-site. It starts with a basic broth made by simmering whole chickens from Kyushu with water for six hours, fully extracting the delicious flavors of the chicken, resulting in a rich and layered taste that bursts in your mouth. Next, the Torita-style way to enjoy it is to dip the succulent bone-in chicken, chicken thighs, chicken breasts, and Hakata green onions into the broth until cooked, then add juicy chicken meatballs containing chicken gizzards and vegetables to soak up the broth. A specially prepared dipping sauce made with a versatile Kyushu mandarin vinegar base and perfectly ripe yuzu pepper enhances the flavor even more. You can also choose to finish with zosui (rice soup), udon noodles, or a rice dish. The staff will handle the cooking until the very end, allowing you to enjoy it at its most delicious state. Side dishes include various famous Hakata delicacies, such as "Sesame Mackerel" and "Homemade Spicy Cod Roe," adding more enjoyment to the meal. There is also a selection of sake that pairs well with the dishes, including the restaurant's original brand and local premium sake.
