Shichimi Noodle Pavilion, the main branch, is a specialty store that inherits the flavors of "Noodle Okabe," which opened in 1963, serving Omi Shichimi Noodles. With around 70 branches across the country, it is a key player in spreading the name of Omi Shichimi Noodles nationwide. Omi Shichimi Noodles feature a Japanese-style golden broth base, enriched with a generous amount of cabbage, bean sprouts, wood ear mushrooms, and pork, making it a soul food of Shiga.
The golden broth at Shichimi Noodle Pavilion is made by simmering chicken bones from Omi chicken, kombu from southern Hokkaido, and six types of dried fish flakes, including bonito and mackerel. Additionally, the broth is cooked over high heat in a single pot, bringing out the sweetness of the vegetables and emulsifying the meat's fat, resulting in a rich and full-bodied flavor that is light yet satisfying.
Tasting Omi Shichimi Noodles on their own is already delicious, but there are many ways to enjoy them. Adding half a spoonful of vinegar enhances the broth's flavor; adding homemade chili oil transforms it into spicy shichimi noodles; combining chili oil and vinegar creates hot and sour noodle soup; adding garlic turns it into energizing shichimi noodles, and adding ginger makes it a warming shichimi noodle dish.
