The area around 深大寺 (Shinmyo-ji) is famous for its soba (buckwheat) restaurants, with approximately 20 soba shops nearby. Among these, 湧水 (Yuusui) is one of the top two popular restaurants.
The shop uses Japanese-grown stone-milled soba flour and has staff hand-making the noodles on-site. They also adjust the ratio of soba flour sourced from various regions in Japan according to the seasons, providing customers with the highest quality soba noodles.
Additionally, the restaurant offers locally brewed beer, Japanese sake, and a variety of side dishes, making the menu quite diverse. The soba yokan (buckwheat jelly) sold at the shop is also a popular item for souvenirs to take home.
