"Chicken Miyabeya" is a dish made by stir-frying chicken, onions, and other ingredients in tomato sauce, topped with a poached egg. The rich and savory flavor combined with the runny poached egg is truly a perfect match. "Kōtōhan" visually resembles curry rice topped with a poached egg, but it lacks the spiciness of traditional curry. Instead, it offers a unique, smooth texture and flavor. The name "Kōtōhan" comes from the fact that poached eggs were considered a "high-class" ingredient during the Meiji era. Additionally, the menu features a variety of delicious traditional Western dishes, including hamburger steak, fried shrimp, and omelets. Every sauce and condiment is handmade by the owner, with meticulous attention to detail from the very beginning of the process, making it a representative local establishment of Gifu City.
