Signature dishes like "Chicken Miyabeya (チキンミヤベヤ)," "Kōtōhan," and "Hida Steak" are exclusive to the Tokai region where Gifu Prefecture is located, making them quite rare elsewhere.
"Chicken Miyabeya" is a dish made by stir-frying chicken, onions, and other ingredients in tomato sauce, topped with a poached egg. The rich and savory flavor combined with the runny poached egg is truly a perfect match.
"Kōtōhan" visually resembles curry rice topped with a poached egg, but it lacks the spiciness of traditional curry. Instead, it offers a unique, smooth texture and flavor. The name "Kōtōhan" comes from the fact that poached eggs were considered a "high-class" ingredient during the Meiji era.
