The "Unagi Restaurant Warajiya" was established in the 10th year of Genna (1624) and has been a beloved traditional restaurant in Kyoto for over 400 years. The name of the restaurant originates from an incident where Toyotomi Hideyoshi took off his waraji (straw sandals) to rest inside the establishment. The signature dish is the unagi double serving "Unabe & Uzofusui," which includes the clear soup-style hot pot "Unabe" made with domestically sourced unagi (eel), and the unagi rice porridge "Uzofusui," where white rice, vegetables, and grilled unagi are cooked together in another pot, allowing diners to enjoy two different styles of unagi dishes at once. The "Unabe" features large pieces of unagi, white leeks, Shonai wheat gluten, and glass noodles, with simple ingredients that highlight the smoky aroma of the grilled unagi, perfectly complemented by a rich broth infused with ginger, allowing for a complete tasting experience of the eel's deliciousness. Following that, the broth of "Uzofusui" contains the essence of various ingredients, offering an excellent flavor; it is also enriched with egg and mochi, providing a satisfying fullness.
