Founded in 1902, FUJITAYA is a century-old restaurant specializing in Hoshian (星鰻飯), located in a residential area near Itsukushima Shrine. Hoshian is a local delicacy of Miyajima. The preparation involves splitting the eel open from the back, applying a soy sauce-based glaze, and grilling it repeatedly to infuse the flavors. The grilled eel is then served over steaming hot white rice as a donburi dish. FUJITAYA is the only restaurant in Miyajima to have been awarded a Michelin star. The main menu features only Hoshian (served with soup and pickles) along with a few side dishes and alcoholic beverages. The restaurant insists on using only naturally sourced eels from Miyajima, selecting those weighing between 100 to 120 grams, as this size offers the best flavor. Due to limited availability, the restaurant will close early once they run out of eels. When the lid of the wooden pot is lifted, diners are greeted with plump, thick eel generously covering the hot white rice, and the enticing aroma greatly stimulates the appetite. The donburi bowl is also preheated, ensuring that the last bite remains warm. As a well-known local establishment, long queues are common, so it is recommended to visit when you have ample time. Please register on the waiting list before lining up, and then wait patiently.

Get off at the "Miyajimaguchi" station on the JR Sanyo Main Line. Take the Miyajima Ferry for about 10 minutes to reach the Miyajima Pier. After disembarking, it's about a 15-minute walk.
