The traditional flavors developed by the previous generation have been passed down to the son, who has taken over as the second-generation owner, making it a local landmark representing the standards of Hakata ramen. The secret to the delicious signature broth comes from a method called "Shōkai broth." Using the iron pot that has been in use since the establishment, pork bones are simmered for 16 hours, continuously adding to the broth to create an exclusive and delicious flavor. Its rich and unique taste is addictive. The extremely thin straight noodles can fully absorb the broth, providing a chewy texture. The hardness of the noodles can be chosen from four options: "extra hard, hard, normal, and soft." By the way, the recommended hardness by the shop is "hard." The ramen is accompanied by various toppings such as chashu and wontons. There is a wide variety of ingredients available. In addition to the unique extra noodle service for Hakata ramen, the side dishes like fried rice and karaage are also abundant. It is a popular spot for locals and ramen enthusiasts from all over the country, known for its long lines.
