They carefully select Koshihikari rice grown in Aizu (Fukushima Prefecture) and insist on cooking it fresh in-store. The secret to delicious onigiri is to start shaping the rice only after it has cooled to the appropriate temperature. Even when cold, the cooked rice retains a fluffy and satisfying texture, making it the best choice for takeout. In addition to the rice, other ingredients are also carefully chosen, such as richly flavored domestic nori and Okinawan sea salt, which is high in minerals. The use of seasonal ingredients for a variety of fillings is another major selling point. They always offer 14 different flavors of onigiri and also introduce seasonal limited flavors. The daily simmered dashi paired with the shop's special red and white miso soup is also worth trying. Including the Tokyo main store located inside the Yaesu Central Exit of Tokyo Station, all branches are conveniently located either inside or near the ticket gates. When taking the Shinkansen or limited express trains, it's a great idea to grab some onigiri to enjoy on board.
