"Ginzan Onsen" has been a well-known hot spring since the Edo period and now attracts a large number of domestic and international visitors. The predecessor of Izu no Hana was a local eatery that opened in 1957 (Showa 27); in 2013, this 140-year-old traditional house was renovated and transformed into a café and restaurant at its current location.
The restaurant's specialty, "soba noodles," is made using the same method that has been passed down since its establishment. The soba noodles are made from "Mogami Sawase," a buckwheat flour produced in Obanazawa, Yamagata Prefecture, which is famous for its soba shops, and are enjoyed with a homemade bonito broth dipping sauce. The "Fried Eggplant Soba," topped with plenty of fried eggplant, is highly recommended, and during lunch hours, there are value meal combinations available. In the evening, the menu features seasonal dishes made with ingredients from Yamagata, snacks that pair well with sake, as well as set meals and full-course dinners (reservation required two days in advance).
During coffee hours, the shop offers special drinks made with Yamagata variety fruits and desserts like the famous Soba Parfait, which are recommended for enjoying while strolling and resting in the hot spring town.
