🍜 Kagizen Yoshifusa Shijo Main Store

📝 Introduction

A traditional dessert shop in Gion with a history of over 300 years.

📖 Details

Founded over 300 years ago during the Edo period, in the "Kyōhō era," this is a long-established dessert shop in Gion. The most representative Japanese sweet is "Kuzukiri," which has a smooth texture and excellent elasticity. It is made from top-quality Yoshino kudzu sourced from "Morino Yoshino Kuzuhonpo" in Nara's Ōyuda. The kudzu starch is dissolved in water, heated, and then placed in cold water before being cut into fine strips. This simple method allows the delicate flavor of the ingredients to shine through. The black sugar syrup, made from Bataru black sugar, adds a fresh and rich sweetness that enhances the flavor of the kudzu. Another signature item is the "Kikujōgashi," shaped like a chrysanthemum. This melt-in-your-mouth dry confection is made from premium wasanbon sugar sourced from Tsuchinokuni in Awa City, Tokushima Prefecture. The shop retains a confectionery mold from the late Edo period, specifically from the first year of the Genji era (1864), suggesting that the history of Kikujōgashi exceeds 150 years, making it a long-selling product beloved by customers. The design throughout the shop reflects its ancient history, creating a tranquil atmosphere that is quite appealing. Enjoying the delicious sweets from this renowned old shop in Gion within such an elegant space is truly a rare delight.
