Founded in 1928, this popular soba noodle shop in Gifu has a history of over 90 years. It is about an 8-minute drive from JR "Gifu" Station and Meitetsu "Meitetsu Gifu" Station, located near the Gifu City Hall in a residential area on the west side of a main road. The shop's signature dish is "Chilled Soba Noodles," which has remained popular since its opening, with about 80% of customers ordering this dish. While typical chilled soba noodles are served with tempura flowers, this shop's unique version includes both tempura flowers and homemade fried tofu skin (the kind used for making sushi). Originally introduced at the request of customers, the tofu skin, which becomes more flavorful the more you chew it, pairs excellently with the crispy tempura flowers. This dish is not only popular in the summer but also has a high repeat purchase rate throughout the year. Another signature dish is "Miso Udon." With a unique recipe that includes Hatcho miso, sugar, and mirin, it guarantees that anyone who tries it will fall in love. The noodles used are flat noodles instead of the thicker ones typically used for simmered udon. The chewy flat noodles perfectly complement the udon sauce, along with rich toppings like green onions, fried tofu skin, and burdock. It may seem simple, but it is a truly heartwarming and satisfying dish, especially during the cold winter months.
