Additionally, the "創作平安王朝料理 (Creative Heian Dynasty Cuisine)," which combines the meals of Heian aristocrats with modern twists based on ancient texts, has also garnered attention. The "Creative Heian Dynasty Cuisine" is available only for private dining for two or more people and requires a reservation one week in advance. The most famous item available only at the café of this establishment is the soufflé pancakes. The previous owner was so impressed after trying them in France that he decided to offer them in his own restaurant. After ordering, the soufflé pancakes are baked slowly for 25 minutes, rising fluffy in the Cocotte, making them a standout on social media. In addition to the classic vanilla and matcha flavors, a limited seasonal flavor is introduced each month.
