Morita-ya (森田屋), which opened in the second year of the Meiji era (1869), is the first specialty beef shop in Kyoto, providing high quality and traditional flavors for over 150 years. Located in the "Tamba Wachi Plateau," it has a professional ranch where every Kyoto Wagyu is carefully raised in a pure water source and rich natural environment. The selected "Kyoto beef" is considered a work of art, with its delicate flavor and elegant texture being its greatest charm. Morita-ya's signature dish, "Sukiyaki," involves brushing a hot iron pot with beef fat, sprinkling it with coarse sugar, and laying down slices of meat to sear and color them before drizzling with homemade sauce. The first bite is enjoyed by dipping the meat in egg yolk, a traditional method that allows guests to savor the original deliciousness of the meat.
