It is rooted in "Yonekyu," famous for its Omi Beef, and has inherited Yonekyu's philosophy to this day. The beef used at Mori Shiman is carefully raised Omi Beef from their own ranch, taking about two and a half years, which sets it apart from other restaurants that supply Omi Beef.
