Fresh air and clear flowing water surround Oze, nestled among the bountiful nature of the Oligon Mountains. Located at the foot of these mountains is the sake brewery, Otagiri Shuzo. This brewery originated in the mid-Edo period, with Otagiri Shuzo officially starting its business in 1902. The renowned sake "Oze Sadaijin" is named after Oze Saburo, a well-rounded figure from the late Heian period.
The sake brewery, relocated from a surplus army warehouse, features a notably high ceiling and is constructed in a truss structure, similar to the World Heritage site, Tomioka Silk Mill, allowing for a spacious interior without supporting columns. At Otagiri Shuzo, visitors can admire the historic architecture and tour the brewery, exploring the mysterious world of sake production. The sake-making lectures conducted by the brewery owner offer new discoveries with each visit and are very popular, attracting many regulars.
Among the sake crafted by Otagiri Shuzo, the "Sadaijin Junmai" is particularly recommended. It has a refreshing taste while also allowing the sweet flavor of white rice to shine through, making it an excellent choice for pairing with meals. Depending on the temperature, different flavors can be experienced, so it is recommended to try it both chilled and warm, as well as in various drinking styles.
