"Otsumami Research Institute" sells 120 carefully selected snacks from across the country and pure sake from Shimane; the "Japanese Red Bean Soup Association" is a famous red bean soup shop that promotes red bean soup as a regional traditional food, claiming "Izumo is the birthplace of red bean soup" based on local records. The signature red bean soup features a clear broth flavored with four types of sugar, infused with freshly cooked Dainagon red beans, resulting in a refreshing taste. There is a rich variety of flavors, including "Izumo Red Bean Soup," which comes with chewy homemade shiratama; "Yen Ketsu Red Bean Soup," which includes soft, freshly roasted mochi made from the Shimane variety of Nitamimo glutinous rice; and the refreshing "Cold Red Bean Soup," among others.
