Located in Hyogo Prefecture, the castle town of Izushi, known as "Tajima's Little Kyoto," is an important preservation area for traditional buildings, retaining historic streets. The history of "Izushi Soba" dates back to the Edo period, famous for its motto of "freshly ground, freshly kneaded, freshly boiled." With about 40 soba shops, it is one of the top soba destinations in the Kansai region.
"Jinbei" exudes a warm and sincere hospitality, leaving a deep impression with its Japanese-style space. A family-run business for three generations, it has long upheld tradition since its establishment and is the most popular soba shop in Izushi. The individual set meal features five plates of soba served in Izushi-style small dishes along with various condiments. Diners can order additional small plates of soba based on their appetite, which is a characteristic dining style of Izushi Soba. Although each plate is not large, the addition of fresh egg, yam, and other rich condiments ensures that diners will keep reaching for more. The chewy soba paired with a thicker dipping sauce also pairs well with local sake. It’s worth mentioning that if one eats more than 17 plates, they will receive a "Soba Master Certificate."
