The restaurant's signature dish is the Hime Masu (姫鱒) prepared in a style known as "CEP" in Ainu language. Shikotsu Lake is one of Hokkaido's top sources for Hime Masu, which is known for its delicate flavor and lack of fishy taste. The fishing season for Hime Masu opens in June and continues until the end of August, allowing visitors to enjoy fresh Hime Masu in dishes such as tempura rice bowls, grilled with salt, and the Shikotsu Lake CEP set meal. Among these, the fresh Hime Masu sashimi is particularly recommended. In addition to à la carte options, set meals are also available, making it a must-try culinary experience when visiting Shikotsu Lake.
