Located in front of the main gate of Izumo Taisha, the Izumo Soba Noodle specialty shop is renowned for its Izumo Soba, which, along with Iwate Prefecture's "Wanko Soba" and Nagano Prefecture's "Togakushi Soba," is known as one of the "Three Great Soba Noodles of Japan." Izumo Soba is a well-known local specialty. The noodles are made using the "Hikigurumi (挽きぐるみ)" method, which involves grinding whole buckwheat directly into flour, resulting in a darker color and rich flavor.
Tanakaya exclusively uses buckwheat flour that is stone-ground from domestic sources in Hokkaido or Shimane Prefecture, selected seasonally. The broth is made by extracting flavors from natural kombu and other ingredients, paired with locally sourced soy sauce from Taisha Town, hon-mirin, and Shimane's traditional sake, creating a deliciously rich soba sauce.
The dining experience at the shop is unique. "Wari Soba" is served in lacquerware with soba noodles, garnished with condiments and drizzled with soba sauce; "Kamaage Soba" consists of freshly boiled soba noodles served in a large bowl with the cooking water, enjoyed with condiments and soba sauce. Additionally, there is a dry soba option where customers can choose toppings like yam puree, natto, and tempura, allowing for a personalized meal experience.
