Tanimoto Kamaboko Shop was established in 1916 and is a century-old store specializing in handmade fish cakes. It offers traditional delicacies made by artisans with national first-class qualifications in fish paste products. Tanimoto Kamaboko Shop currently has multiple branches, with the Dogo branch located directly across from the Dogo Onsen Honkan. The Dogo branch primarily focuses on takeout, where many tourists can be seen buying hot fish cake delicacies to enjoy while strolling around. The most popular snack is "fried fish cake" (揚げかまぼこ). Fried fish cake is a specialty snack from Ehime. It is made by grinding various small fish caught in nearby waters, bones and all, into fish paste. This paste is then placed in a wooden frame to form flat fish cakes, which are subsequently deep-fried in rapeseed oil. Because both fish bones and meat are used in the production of the fish cakes, they are not only delicious but also rich in calcium and other nutrients. The fried fish cake has a chewy texture and unique flavor, and you can even taste the crispy small fish bones, making it an addictive treat. Freshly fried, it is at its best, but even when cooled, reheating the fried fish cake and adding a few drops of soy sauce makes it quite tasty. There is also a type of fried fish cake that resembles croquettes, known as "fried fish patty" (魚のコロッケ). This is made by mixing chopped onions, carrots, and other ingredients into the fish paste, then coating it with breadcrumbs and frying it. The outer layer is crispy while the inside is soft and very delicious.
