Founded in the late Muromachi period, the wagashi shop "Toraya" adheres to the philosophy of "recreating the essence of a wagashi shop in the present day." In 2007, it opened this Toraya workshop on a vast 5,600 tsubo site that was once a villa. Passing through the charming thatched mountain gate, customers are welcomed by a garden that showcases different seasonal charms. After walking along a path where sunlight filters through the trees, visitors enter a glass building consisting of four areas: a kitchen, a sales area, a terrace seating area, and a tea room. In the kitchen, one can observe the master grilling the outer skin of dorayaki and the process of making wagashi filled with the signature red bean paste. The sales area offers workshop-exclusive wagashi made with seasonal ingredients, as well as desserts like dorayaki and daifuku. In the tea room, guests can enjoy freshly made wagashi, along with dine-in exclusive dishes. In addition to classic sweets like "anmitsu," which features agar made from natural tengusa drizzled with the workshop's special Awagashi syrup, seasonal limited items are also available.
