WARA is a well-known Sanuki udon restaurant in Kagawa Prefecture. Next to the thatched-roof old house is an ancient waterwheel, which is very eye-catching. The traditional Japanese farmhouse interior is filled with old-fashioned charm, offering authentic Sanuki udon. To create the highest quality udon, the restaurant insists on using the finest flour and makes subtle adjustments to the salt content and concentration based on the climate, temperature, and humidity. They do not prepare the noodles in advance; instead, they emphasize making them fresh upon order, allowing customers to enjoy the freshest and most flavorful udon.
WARA has four classic dishes that best represent the restaurant's unique flavors: "Kamaage Udon" (Japanese: 釜あげうどん), "Zaru Udon" (Japanese: ざるうどん), "Nama Shoyu Udon" (Japanese: 生醤油うどん), and "Bukkake Udon" (Japanese: ぶっかけうどん).
Among these, the Kamaage Udon is a must-try. Unlike regular udon, which is chilled in cold water to enhance its chewiness, Kamaage Udon is served directly from the hot broth without cooling, allowing it to retain the aroma of the wheat and showcasing the skill of the artisan through the noodles' chewiness and smoothness.
