With its beautiful silver scales, it is praised as the "gem of Lake Biwa." The meat is rich in fat and has a flavor similar to high-quality tuna. The dishes featuring Biwa trout are diverse, including sashimi, grilled trout, ham, and Nanban-zuke trout. In addition to the elaborate bento filled with sashimi, sushi, and cream sauce stir-fried trout, you can also enjoy shabu-shabu kaiseki cuisine in the evening.
