Ippudo, a Hakata Tonkotsu ramen shop that opened in Fukuoka in 1985, has a branch in Ginza. Here, you can enjoy the "Kasane Ramen" (かさね), which is a blend of Ippudo's basic Tonkotsu and chicken white broth. The soup perfectly combines the flavors of both broths while extracting the essence of pork bones and chicken, resulting in a refreshing yet richly layered taste. The ramen in the shop uses extremely thin noodles paired with the Tonkotsu broth, while only the "Kasane Ramen" features medium-thick noodles. Since there are not many places in Japan where you can enjoy this type of ramen, many ramen enthusiasts specifically visit the Ippudo Ginza branch to taste this unique ramen.
Highlights
