This soba noodle shop, which specializes in handmade noodles by skilled chefs, is named "Iwahashi-kan" after the nearby Bandai Mountain, which is also known as "Iwahashi-yama." In Inawashiro Town, a well-known soba-producing area in Eastern Japan, traces of edible buckwheat were discovered during early archaeological excavations of the ruins beneath the shop. In this land, where soba culture has flourished since ancient times, the soba noodles served at the shop are made using "Inawashiro's Ten no Kaze," a buckwheat that is stone-ground. The flour "Yuki no Chikara" is used to enhance the stickiness, with a blending ratio of buckwheat flour to wheat flour of 8 to 2. The menu offers a wide variety of dishes, including common options like "Mori Soba," "Kake Soba," and "Tempura Soba," as well as various local specialty dishes. There is "Shukugen Soba," served during celebrations (such as weddings) to guests, and "Godan Soba," which comes with five different condiments including walnuts to vary the flavors. Additionally, there are local Aizu dishes like "Kozuyu (こづゆ)," which is a stew made with taro and scallops. The spacious interior of the shop also features a direct sales area for agricultural products, where customers can purchase local vegetables and processed foods.
