Located near the center of the Kii Peninsula, in the Yoshino region, is the takeout sushi specialty store "IZASA (ゐざさ) Main Store." Established in 1921 as a rice shop, it gained popularity for the sushi made by the first-generation owner, leading to the commercialization of the local Yoshino dish "Kakizuke Sushi." The soul of their signature Kakizuke Sushi is the "vinegared rice," made from carefully selected Japanese rice mixed in a unique ratio. The ingredients include classic mackerel and salmon, as well as sea bream, horse mackerel, and fresh shrimp. The combination of vinegared rice and salted ingredients, along with the subtle fragrance of the persimmon leaves, creates an exceptional flavor. It is recommended to taste it without any dipping sauce. Additionally, the "IZASA Sushi," wrapped in bamboo leaves, was introduced by Nakaya Main Store, which operates the IZASA Main Store, as a local specialty of Kamikatsuyama Village in 1955 (Showa 30). The small piece of red salmon peeking out from the bamboo leaves resembles a cute hina doll. Other offerings include thick-cut mackerel and anago (conger eel) nigiri, cherry sushi designed with Yoshino's famous cherry blossoms, and various flavors of mountain vegetable rolls filled with a generous amount of wild vegetables.
