Established in 1861, it is the original shop of Herring Soba Noodles. In 1882, the second-generation owner conceived the idea of pairing dried herring, which is cut and dried, with soba noodles to create "Herring Soba Noodles." Since then, Herring Soba Noodles have become a well-known specialty of Kyoto. Today, the fifth generation continues to pass down the original delicious taste.
The side dish for Herring Soba Noodles is exclusively "Nishin Bōni," which is simmered using a secret recipe. The salty-sweet flavor of the simmered herring seeps into the light soba noodle broth, creating a rich and aromatic taste. Additionally, green onions can be added according to personal preference.
