In 1882, the second-generation owner conceived the idea of pairing dried herring, which is cut and dried, with soba noodles to create "Herring Soba Noodles." Since then, Herring Soba Noodles have become a well-known specialty of Kyoto. Today, the fifth generation continues to pass down the original delicious taste. The side dish for Herring Soba Noodles is exclusively "Nishin Bōni," which is simmered using a secret recipe. The salty-sweet flavor of the simmered herring seeps into the light soba noodle broth, creating a rich and aromatic taste. Additionally, green onions can be added according to personal preference. For those who want to savor the deliciousness of herring, a set meal with herring flake rice can be ordered, and in summer, cold Herring Soba Noodles are also available.
