The original shop of the local delicacy "SECHI-yaki" in Gobō City, Wakayama Prefecture. SECHI-yaki is a dish that uses eggs instead of flour to shape stir-fried noodles into a style similar to okonomiyaki. It is said that around the 30th year of the Shōwa era (1955), the first-generation owner, Ms. Natsuko Yamashita, created this dish in response to customers' requests for "a dish that combines stir-fried noodles and eggs," after numerous trials. "せちがう (SECHIGAU)" is a local dialect term in Gobō, meaning to mix randomly, and this dish got its name because the noodles and eggs are quickly stir-fried together. SECHI-yaki comes in five varieties: squid, pork, beef, shrimp, and a mixed flavor that includes all ingredients. The ingredients are generously sized, and the portions are substantial. Staff prepare the dish on a teppan right in front of the customers, making even the waiting time enjoyable. Additionally, there are five types of stir-fried noodles made with the same ingredients as SECHI-yaki, which can be paired with white rice, miso soup, rice balls, and more, making it a perfect accompaniment to the must-try SECHI-yaki.
