The sauce is based on mackerel and does not use chemical seasonings, making it delicious and aromatic, prompting one to drink it all. In addition to the simple traditional noodles, there are various menu options, including "Happō（八宝）," a dish paired with Chinese-style eight treasure vegetables. The noodles seasoned with Hacchō miso from Okazaki City in Aichi Prefecture have a distinctive Nagoya flavor.
